1st Anniversary and Gearing up for Christmas 2017!

So the Christmas season is finally here! This year has been quite eventful and full of new experiences. I am so grateful for every single day of this year. 

I've not really planned anything big because whenever I plan, it usually never happens. But I've called some friends over this weekend to kick start the celebrations and get into the festive mood. We had a mini barbecue party and then a long drive to one of my friend's camp in the desert. We were up until 5 AM! The barbecue took a while as this was our very first time doing it but the end result was yum, thanks to hubby - he came up with the marination recipe. Here are some pictures:



There are 2 highlights of this month. One is that I got my driving license. I can't begin to tell you how happy and proud I am of myself for getting it. It was definitely not an easy task but I managed to do it. Now I can move around the island and explore and I don't have to depend on anyone to get me from A to B. Like somebody said, license is indeed a degree that one needs to have in the gulf. You're so handicapped without it. So anyways, now that I have my DL, hubby and I keep going for mini drives around the area almost everyday after work. Its so nice. And its a nice feeling when I am able to drive my husband around. I even drove him to the salon the other day for a haircut! 😎

Another highlight of the month is that today, 2 December 2017 is a special day because it is our 1st wedding anniversary. 365 days just flew by before we even realised. It has definitely been a year of learning. There is a lot more to learn, explore and grow together and I am grateful for all that God has blessed us with and all that he is going to do in our lives.

Last night at 12 we sang Happy Anniversary to ourselves along with my parents while cutting the cute little anniversary cake that hubby ordered. Spent some time reflecting on the past year about all the good times we had, the places we visited, the challenges we faced, and ofcourse all the crazy and silly fights we had. Back to work today and it is a busy day but we will be wrapping up early (hopefully), and spend some time with family and head out for dinner with friends. Simple but special - just the way I like it.

Chicken Biriyani

After numerous trials on various types of Biriyanis, I finally found the one I love the most and it is my own creation! Here’s the recipe. For the Marinade: 1 Whole Chicken (cut into small pieces) 1 1/2 cups Yoghurt 2 Tsp Chilli Powder 2 Tsp Salt 2 Tbsp Ginger-Garlic Paste 4 Green Chillis (Cut into one inch pieces) 1/2 Tsp Turmeric Powder 4 Tsp Biriyani Masala (Brand: National or Shaan) 1/2 Cup Mint leaves 2 Medium sized Tomatoes (cut into small pieces) 1/2 Lemon 3 Onions 6 Tbsp Oil For the Rice: 2 Cups Basmati Rice 4 Cloves 4 Cardamoms 2 Cinnamon Sticks 2 Bay Leaves 10 Peppercorns 2 Tbsp Oil 3 Tsp Salt Plenty of Water 1/2 Bunch Coriander leaves 1/2 Bunch Mint leaves 3 Tbsp Milk 1/2 Tsp Turmeric powder Method: 1. Mix all the ingredients in the marinade section (except onions and oil) in a medium sized bowl and refrigerate for at least an hour. Chicken Fry (Mummy's Recipe)

This Chicken fry has been our family favorite since forever. I learned this healthy yet flavorful  dish from my mom, who is a healthy eater and is totally against all those artificial additives in food.  It's on the table for all parties & gatherings and everybody loves it.  Do give this a go and let me know how it turned out. Ingredients 1 Whole Chicken (Cut into medium size pieces) 3/4 Cup Yogurt 2 teaspoons ginger-garlic paste 2 teaspoons kashmiri chilli powder 1 1/2 teaspoons cumin powder 1/4 cup water 2 teaspoons salt (or according to taste) For Frying: 4 tablespoons Oil Few strands of curry leaves Method 1. Wash the chicken thoroughly, add in the rest of the ingredients (except oil and curry leaves) and mix well. 2. Transfer the chicken on to a cooking dish and with lid on until all the water evaporates. 3. Take a non-stick pan and add 3-4 tablespoons of oil. 4.
