Breakfast Pancakes

And finally after a super long break I'm back to blogging and I am so happy about it. A lot of things happened during the past 1 year.. infact life has completely changed. I'll tell you all about it in another post. For now let's stick to the recipe in this space.

Off late I developed a liking towards pancakes for breakfast. So quick and easy to prepare and they taste so so good. Hubby likes them as much as I do! The best part is, these don't have eggs or butter in them! A guilt-free breakfast especially if you are controlling your intake of fat and want something light in the mornings. So here's how you make them.

Ingredients:

1 cup All purpose flour
3 tbsp Sugar
3/4 tsp Baking powder
Pinch of Salt
1 tsp Vanilla Essence
1 cup full-fat milk
3 tbsp Oil
Water (as needed)

Method:

1. In a medium sized bowl, whisk all the dry ingredients. In another bowl, whisk all the wet ingredients and slowly keep adding to the dry ingredients while gently whisking with a egg whisker for a couple of minutes until there are no lumps (don't over whisk).

2. Your batter must be thick YET of pouring consistency. You can add some water if the batter is too thick.

3. Place a small non-stick pan on medium heat. Spoon a ladle full of batter into the pan and slightly spread it to form a small disk shape.

4. Once you see bubbles forming on the top, flip the pancake and cook for a minute or until it turns golden brown.

For the topping:

Above all toppings, I love Nutella / chocolate sauce on my pancakes.
Microwave some Nutella (and some extra chocolate bits if you like) with a teaspoon of milk for 20 seconds. Stir it and add chopped nuts to it. Spoon this over the pancakes and kill it like there's no tomorrow! For those trying to eat strictly healthy, you can add fruits or honey as toppings.. or whatever you like ofcourse ;)

Tc & Stay Fab!
Love,
J

I always find it so hard to get the consistency right! I think the trick to a good fluffy pancake is indeed in the batter!

1st Anniversary and Gearing up for Christmas 2017!

So the Christmas season is finally here! This year has been quite eventful and full of new experiences. I am so grateful for every single day of this year.  I've not really planned anything big because whenever I plan, it usually never happens. But I've called some friends over this weekend to kick start the celebrations and get into the festive mood. We had a mini barbecue party and then a long drive to one of my friend's camp in the desert. We were up until 5 AM! The barbecue took a while as this was our very first time doing it but the end result was yum, thanks to hubby - he came up with the marination recipe. Here are some pictures: There are 2 highlights of this month. One is that I got my driving license. I can't begin to tell you how happy and proud I am of myself for getting it. It was definitely not an easy task but I managed to do it. Now I can move around the island and explore and I don't have to depend on anyone to get me from A to B. Like ...

Oreo Chocolate Cup Cake

Delicious, Chocolaty, Spongy and EASIEST cupcake ever! I make this every time I have a chocolate craving which is - almost 2-3 days a week (well.. guilty as charged). You will absolutely love it and probably want to make it over and over again! Do try it and let me know how it turned out. Ingredients 1 Small Packet Oreo Cookies (4 in a pack) 1-2 Tablespoons Milk Few Chocolate Chips Method 1. Break 4 Oreo cookies into quarters and add them to a blender/grinder. Blitz it 3-4 times till you have a coarse powder.  2. Add milk and stir very gently just once (Add just enough milk for the mixture to turn moist. Also do not stir too much as the air bubbles in the cookies help in making the cake spongy). 3. Spoon half of the mixture into a small microwave safe cup, add chocolate chips and then add the remaining mixture. 4. Cook for 30 seconds in the microwave, check and cook further 20 or 30 seconds until the cake is spongy to touch. 5. Top with Icing Sugar / Nutella / Ice-cre...
